Free pour spouts have two holes in them. One for the alcohol, and another for airflow. By pluging the hole for airflow (like he's doing in this video) the alcohol will not pour. Its a great way to contol your pour without getting your fingers all over the alcohol. Not flaming you, just lettin ya know!

yeah i would avoid "controlling" the alcohol flow by plugging the spout with my thumb, if the custoemrs see that they are not gonna be pleased.

well you're supposed to know how to count :PIf counting to 4 = an ounce. Than counting to 2 = half an ounce. 1 = quarter Innit? :P

first start with an old liquor bottle filled with water and a pour spout (preferably the short metal ones, they are the most consistent). Instead of the number "one" you count "bubble" to allow for the time of the initial air bubble to escape, then continue on the rest of your counts at about the tempo of a European police siren. back off immediately to prevent overpour after you reach 4. check your pour in a one ounce shot glass.
